PRESENTATION
The mandatory Non-Residential Recycling Ordinance, adopted by the Board of County
Commissioners on July 27, 2004, established the Waste Reduction Awards Program, the WRAP
award, to recognize businesses and institutions for enhanced and innovative recycling programs.
The Solid Waste Management Department's WRAP program is consistent with the guiding
principles adopted by the Board of County Commissioners on December 5, 2006: (1)
Environmental and Growth Management Compliance, (2) Airspace Preservation, (3) Operational
Excellence and (4) Best Val ue Service.
The Board of Collier County Commissioners is pleased to recognize Nanles Tomato for
their efforts to contribute to the greater good of all of Collier County by helping to prolong
the usa hie life of the Collier County Landfill, by reducing their solid waste stream throngh
an enhanced recycling program as evidenced by:
. Expanding the Naples Tomato recycling program from a one cubic yard cardboard recycling
container to seven 96-gallon commingled recycling carts for the collection of aluminum, tin
cans, glass, office paper, and plastics (1 through 7).
. Placing recycling bins under-the-bar for glass bottles and near the kitchen to dispose of food
packaging
. Naples Tomato promotes waste reduction by banning the purchase of Styrofoam products
used for to-go containers, reducing the number of plastic to-go bags and using reusable
drinking cups for employees.
. Initiating an extensive employee training program by posting signs on their bulletin board and
kitchen areas near trash containers. The "'can" and "cannot" lists of recyclable materials are
both in English and Spanish used as a reminder to employees.
. Naples Tomato restaurant is one of several businesses located in a strip mall that has
implemented a recycling system and they lead the way for all businesses in that particular
strip mall to recycle.
The WRAP award program includes a certificate, a trophy, use of the WRAP logo and space on
the www.coJlicr~ov.nc(/recvc]cs website to showcase their waste reduction and recycling
program .
Therefore, the Solid Waste Management Department and the Board of County Commissioners
congratulates the owners, Jack and Nadine Serfass, a special thanks to Christian Ercolani and all
employees of Naples Tomato for their continued support in promoting waste reduction and
recycling. Their effOlts and recycling leadership is a positive example to other institutions and
businesses and will have a significant effect on sustaining the usable life of the Collier County
Landfill.

CRITERA
A business must be located within the unincorporated areas of Collier County and have Integrated new,
expanded, exceptional and/or innovative recycling and/or waste reduction efforts into Its solid waste
management system In response to and exceeding minimum requirements of the Non-Residential
Recycling Ordinance No, 2004-50. The Ordinance can be found online: www.collleraov.netlrecvcies
Examples Include but are not limited to, partnering with another agency to reuse waste materials,
Increasing capture of recyclable materials from zero to 100%, Incorporating innovative methods of
collection and/or processing of recyclable materials.
Businesses can be self-nominated, nominated by an individual or as the result of a site visit by County
personnel. Awards will be presented four times a year in January, April, July and October. A panel of
technical associates considering the waste reduction and recycling program merits, based on the
program summary, will determine the awards.

Naples Tomato is onc of scvcral businesses located in a strip mall on US 41, in Collier
. County. Like most restaurants in the County, it was provided with a regular dumpster
and a cardboard recycling dumpster. However, restaurant owners Jack and Nadine
Serfass, along with the management team felt that many waste materials were not being
recycled. Along with cardboard, which is a major waste product of the food and supply
packaging, glass bottles, aluminum cans, office paper and plastic containers are all
products that are disposed of in large quantities on a daily basis. In an effort to improve
this situation and reduce the amount of actual waste exported from the restaurant, Collier
County Waste Management Recycling Haulers were contacted. Services from this
recycling provider are not free, adding another complication to the business recycling
program. Upon further investigation, it was discovered that to implement a recycling
program, the property landlord needed to be contacted, since the collection fee for the
community dumpster was included in each businesses' monthly rent. Afrer agreement
from the propeliy landlord, the monthly rent was adjusted for each of the businesses to
include the recycling hauler's fee, leading to not just Naples Tomato implementing a
recycling system, but all the businesses located in that patiicular strip mall. Ongoing
efforts at the restaurant are improving on a daily basis, in terms of recycling knowledge,
product information, and sheer volume of material that is being currently recycled. To
facilitate the recycling program, signs at'e posted in several locations in the restaurant,
~hich remind and direct employees to recycle, accompanied by a list of specific items
which can and carolOt be recycled. This list was complied after careful analysis of what
was atld was not being thrown in the blue recycling bins, combined with the more general
list provided on the larger bins themsclves. In addition, some staff training was provided
in English and Spanish to help all employees understand the meaning of the posted signs
and what to look for on each product. With full sUPPoli of the owners and kitchen
management, recycling has become a common practice a~~restaurant and is highly
encouraged. Presently, the restaurant has five 96-gallon . which are used for the
recycling collection, Upon anival of high season, more bins will be requested as the
production of more recyclables will increase. In addition to the recycling program,
several other practices have been ongoing which contribute to a "greener" restaurant
atmosphere and waste reduction. These activities include banning thc purchase of any
Styrofoam products which can be used as to-go containers, the addition of reusable
employee drinking cups, and careful distribution monitoring of plastic to-go bags. The
above mentioned activities consume a large amount of Styrofoam and plastic, if done
incorrectly without prior considcration. Please consider Naples Tomato for this recycling
award, as much effOli has gone into implementing better business-waste ethics and a
successful recycling program.
